By 好味道海南雞飯By 好味道海南雞飯到底時源自何處？最初確實是源自海南島，但是這裡並非它發光發熱的地方。海南島的白切雞又名文昌雞，但配料和雞油飯和現在盛行的不太一樣。現在盛行的海南雞飯做法可以追溯到在上世紀20-30年代馬來西亞和新加坡等地。美食家蔡瀾在他的《海南雞飯研究》之中提到：「海南雞飯該歸功於新加坡『瑞記』餐廳的老闆莫履瑞這個人。」而隨著新加坡獨立，政府對於當地傳統華人美食較為注重，同時運用各種資料為海南雞飯進行包裝及推銷，讓當地海南雞飯得以成為世界知名料理。
