排骨菜飯

 2 slices 豬扒
 ½ cty 小棠菜
 1 whole 雞蛋
 1 tbsp 紹興酒
 1 tbsp 砂糖
 ½ tsp 鹽
 ½ tsp 胡椒粉
 2 tbsp 生粉

把豬排洗淨瀝乾水份

用肉鎚拍打豬扒令肉質變得鬆軟

在碗裡加入砂糖、胡椒粉、鹽、雞蛋、紹興酒及生粉拌勻

跟著放入豬扒沾滿醃料,醃30分鐘備用

把小棠菜洗淨瀝乾水份,然後切成小段

大火起鑊落1茶匙油

7

放入小棠菜炒至軟身,加入少許鹽調味備用

8

白米煮成熟飯後,拌入小棠菜就完成菜飯

9

用中火起鑊煮熱一煱油

10

放入豬扒,每面炸2分鐘至9成熟

11

再轉用大火炸2分鐘,迫出多餘油份及炸至金黃色,令豬扒更酥脆

最後把豬扒切件即成
